Wafer Lebkuchen taste best when fresh. By
contrast with brown Lebkuchen, these are not
cookies which can be stored indefinitely. Wafer
Lebkuchen must always be kept in their
protective wrappers and stored in a cool place
at 16 - 18 C and at approx. 65% humidity. The
cookies retain their full flavor, remain soft
and moist for between six and eight weeks. Open
packs should be carefully closed after use. The
fresher wafer Lebkuchen are when eaten, the more
flavor they have and the tastier they are.
If wafer Lebkuchen have gone hard due to
incorrect storage, here is a tip for softening
them: Place the Lebkuchen in an airtight
container (a preserving jar, a large glass jar,
for instance) and add a few fresh slices of
apple. Then cover the jar with a piece of foil
and seal with an elastic band and leave for a
few days. The Lebkuchen will then absorb the
humidity from the apple slices. Do not leave
sealed for too long, otherwise mould can form.
Chocolate which has run does not signify any
reduction in quality. The chocolate can turn
slightly gray due to a brief temperature
increase during shipment. This discoloration has
no effect on the quality and taste. The
Lebkuchen can be eaten without hesitation.
